These diabetic foods usually cost more than regular food and do not control diabetes any better. Using regular food to control diabetes is more cost effective and allow person with diabetes to share the same meal with everyone else. By learning some nutritional information you will be able to adjust your diet to suite your particular condition.

Curried Chicken Salad with Grapes

  • 3 cups cooked chicken, cubed
  • 1½ cups red or green grapes, halved
  • ½ cup celery, sliced
  • 2 Tbs. scallions, sliced
  • ¾ cup low fat mayonnaise
  • 2 Tbs. orange juice
  • 1 tsp. curry powder
  • Fresh ground pepper

Combine first 5 ingredients in a bowl. Combine remaining ingredients in another bowl and whisk together until smooth. Toss the dressing with the salad and serve.

Garlic Stuffed Sirloin Steak

  • 1 Tbs. olive oil
  • ¼ cup garlic cloves, finely chopped
  • ½ cup scallion, minced
  • Salt and pepper
  • 2¼ lbs. boneless top sirloin steak, cut 2 inch thick
  • Toothpick

Heat the oil in a medium skillet over medium heat. Add the garlic and sauté for 5 minutes. Add the scallions and cook for 5 more minutes. Add the pepper and salt. Remove from the heat and let cool. Prepare an outside grill with an oiled rack set 6 inches above the heat source. On a gas grill, set the heat to medium. Trim the excess fat from the steak. Make a horizontal slice through the center of the steak, parallel to the surface of the meat, about 1 inch from each side. Cut to, but not through, the opposite side. Spoon the stuffing into the pocket, spreading evenly. Secure the opening with toothpick. Grill the steak, turning once, according to the following guidelines: 15-20 minutes for rare, 25-30 minutes for medium, or 35-40 minutes for well done. Remove toothpicks and slice to serve.

Hot and Sour Soup

  • 4 cups low sodium low fat chicken stock
  • ¼ cup white vinegar
  • 2 Tbs. lite soy sauce
  • 1 Tbs. red pepper flakes
  • 2 tsp. sesame oil
  • 1 cup mushrooms, sliced
  • 1 cup carrots, thinly sliced
  • 2 tsp. cornstarch, or arrowroot
  • 1 Tbs. plus 1 tsp. water

In a stockpot, combine the stock, vinegar, soy sauce, red pepper flakes and sesame oil. Bring to a boil, then simmer for 10 minutes. Add the mushrooms and carrots and simmer for 10 more minutes. Combine the cornstarch or arrowroot with the water. Add to the soup and combine to cook for 5 minutes, until it thickens.

Indian Rice Curry

  • 2 tsp. olive oil
  • 1 small onion, minced
  • ¼ cup tart apples, chopped
  • 2 tsp. curry powder
  • 1/8 tsp. cayenne pepper
  • 4 cups cooked white or brown rice
  • 2 cups canned chickpeas, drained
  • 1 Tbs. fresh lemon juice
  • Fresh ground pepper

In a heavy skillet over medium heat, heat the oil. Add the onion and sauté for 3 minutes. Add the apple and sauté for 3 more minutes. Add the curry powder and cayenne to coat the apple and onion. Add the cooked rice and chickpeas. Cook through until rice and beans are hot. Sprinkle with lemon juice and serve.

Asparagus, Orange and Endive Salad

  • 2- 2½ cups fresh asparagus, diagonally sliced
  • 2 cups endive leaves, torn
  • 2 small oranges, peeled, sliced into rings and seeded
  • 1 small red onion, very thinly sliced
  • 1/3 cup raspberry vinegar
  • 2 Tbs. canola oil
  • 1 Tbs. orange juice
  • 1 Tbs. sugar
  • Salt and pepper

Add asparagus to a large pot of boiling water and blanch for 1 minute. Drain and plunge asparagus into bowl of cold water. Drain again. Dry the asparagus. Combine with endive, oranges, and red onion. Whisk together remaining dressing ingredients. Add dressing to asparagus-endive mixture, toss well, and serve.
